Rhubarb, Orange and Almond Cake
12 oz rhubarb
Mix with 2 oz caster sugar and
Zest half an orange
Steep for an hour stirring once or twice
6oz caster sugar
5oz butter
3 oz self raising flour
Half teaspoon baking powder
4 oz ground almonds
Juice half orange
Beat butter, castor sugar and eggs
Fold in flour, baking powder, almonds, orange juice
Pour into tin and arrange drained rhubarb on top.
Bake at 180 for about half an hour
